Carrot Ginger Dressing


One of my favorite things is the ginger dressing we get when we go for sushi. I started to realize that I actually wanted that more than the dinner so I decided to make it myself. I was surprised at how delicious and easy it was! 


1 organic carrot, you don’t need to peel

1 ” piece of  peeled ginger, you can add more or less to taste, the more you add the spicier it will be

1 tsp brown sugar or honey

2 Tbsps rice vinegar

1 tsp fresh lemon juice, I just juice a whole lemon

2 tsps tamari 

2 tsps toasted sesame oil

pinch of Himalayan or sea salt


The way it says to do it on the food network is to cook the carrot in 1 cup of water for 15 minutes, then puree the carrot and remaining ingredients with 1/2 cup of the carrot water. Sounds lovely

The way I do it is place all the above ingredients into my vita-mix and puree. You can add a little water to thin. If you don’t have a vita-mix you can chop the ingredients add 1/2 cup water and use your blender or magic bullet. 

This is just as yummy!
